CAROLYN’S BROCCOLI CORNBREAD

  
1 8 1/2 oz. box cornbread mix		1 cup cheddar cheese, grated
1 10 oz. pkg. chopped broccoli		6 oz. low-fat cottage cheese
	or chopped spinach		Salt and pepper to taste
1 cup onions, chopped			Jalapeno peppers or 
3/4 stick margarine 				Tabasco sauce (optional)
3 eggs

Mix ingredients. Pour in glass casserole. Bake at 375° until done (about 30 minutes). Do not overcook. For other pans, bake at 400°.
